Señorio de Montanera was founded by a group of ibérico pig breeders. They produce their award-winning hams and charcuterie in Extremadura – where their pigs are raised. Señorio’s hams are made from free-range pigs which forage for acorns (“bellotas”). The fresh loin is marinated in salt, pepper and paprika, stuffed into natural casing and cured for 4 months to produce a rich, sweet piece of charcuterie with a long aftertaste.
